PreparationBring the beans to a boil for 3 minutes, drain and let the beans soak in water over night. Drain the beans and add new water. Bring to a boil for about 10 minutes before adding the thyme, bay leaves, ginger and onions. Cook the beans for about one hour or more time as necessary to be ready. Drain the beans removing the herbs and onions. Combine the garlic, parsley, lemon juice, oil, salt and pepper and put over the beans tossing everything gently.
